Ingredients

For the stuffed turkey
2 large turkey breasts (with skin, or 4 small chicken breasts)
400 grams Spinach
200 grams Feta
2 Tbsps Pine nuts
salt
peppers
2 Tbsps olive oil
For the sauce
400 grams Tomatoes
1 Tbsp olive oil
1 bunch Basil

Preparation steps

For the stuffed turkey, rinse the spinach thoroughly, trim the thick stalks and place the spinach in a pot. Cook slightly over medium heat while turning. Drain the spinach, squeeze well and chop coarsely.

Cut the feta cheese in cubes and mix along with the pine nuts into the chopped spinach. Season with salt and pepper.

Rinse the turkey breasts, pat dry, and season with salt and pepper. Cut a pocket with a sharp knife under the skin.

Stuff the spinach mixture with a spoon into the turkey breast pockets.

Grease a baking dish with butter and place the stuffed turkey breasts into it. Brush the stuffed turkey breasts with oil and bake in a preheated oven at 175°C (fan: 155°C, gas mark 2) (approximately 350°F) for 35 minutes, until crispy.

For the sauce, rinse the tomatoes, blanch, peel, quarter, remove the seeds and chop the pulp.

Heat the olive oil in a pan and saute the tomatoes in it for 5 minutes. Rinse the basil, chop finely, and mix into the tomatoes. Season with salt and pepper.

Spread the sauce on plates. Cut the stuffed turkey breasts diagonally into slices and arrange over the tomato sauce.
