- 6 large Tomatoes
- 12 Batavia Lettuce
- 12 Anchovy fillet
- 14 piited black olives
- 1 cup fresh Goat cheese
- 1 Fennel bulb
- 12 cilantro
- 2 Tbsps olive oil
- salt
- peppers

Preparation steps
1.
Wash and dry tomatoes. Quarter each tomato horizontally.
2.
Wash lettuce leaves and slice the olives. Wash and thinly slice fennel. Wash, dry and shred the chives.
3.
Mash the goat’s cheese with a fork. Add olive oil, fennel and snipped chives. Mix together well and season to taste.

Decorate the first tomato segment with a lettuce leaf, anchovy and olive slices. Place a second segment over the top. Spread with cheese. Add the third segment, covered with lettuce leaf and cheese. Cover

with top of tomato.

Leave in a cool place before serving.
