- 6 Plum tomato
- 1 shallot (finely chopped)
- 1 tsp butter
- ¼ cup cream
- 1 cup Crabmeat (tinned or from the chiller) shredded
- 1 Tbsp Crème fraiche
- 2 Tbsps Sour cream
- 1 Tbsp Fino sherry
- 1 Tbsp chopped Chives
- You will also need
- 6 leaves round Lettuce
- 1 eggbox from a craft shop (not a used one due to risk of Salmonella!)

Preparation steps
1.
Cut the top from each tomato and scoop out the insides using a spoon. Finely dice the top.
2.
Fry the shallot in butter until translucent then allow to cool.
3.
Whip the cream until stiff.
4.
Mix together the crab, shallot, diced tomato, crème fraîche, sour cream and sherry. Season with salt and ground black pepper then fold in the whipped cream.
5.
Spoon the mixture into the tomatoes and sprinkle with chives.
6.
Serve on lettuce leaves in an egg box if desired.
