- 2 day-old White rolls
- 90 milliliters milk
- 1 shallot
- 1 garlic clove
- 2 Tbsps olive oil
- 40 grams dried Apricot
- 40 grams dried Plum
- 40 grams dried Figs
- 1 egg
- salt
- freshly ground peppers
- 1 Rolled lamb roast (prepared, 800 grams)

Preparation steps

Cut rolls into cubes and place in a bowl. Heat milk, pour over rolls and let soak. Peel shallot and garlic and finely chop. Saute both in 1 tablespoon hot oil until translucent. Cut apricots, plums and figs into small cubes. Add shallot, garlic and cut fruit to bread. Mix in egg and season with salt and pepper. Use a spoon to mix well but do not knead.

Preheat oven to 160°C (approximately 325°F).

Rinse meat, pat dry and place on a work surface. Spread filling in center and roll meat up. Tie with kitchen twine. Season with salt and pepper and sear in a hot pan in remaining oil until golden brown. Place in a roasting pan and cook for about 50 minutes. Occasionally turn. When done, remove from oven, remove kitchen twine, slice and serve.
