- 1 ½ kilograms Roast lamb (Leg or shoulder, with bone)
- 1 garlic clove
- 60 milliliters olive oil
- 1 tsp dried mint
- 1 tsp dried oregano
- 1 tsp dried rosemary
- salt
- freshly ground peppers
- 200 milliliters dry white wine
- 400 milliliters lamb stock

Preparation steps
1.
Preheat oven to 160°C (approximately 325°F).

Rinse lamb and pat dry. Peel garlic and press. Mix with oil and add dried herbs. Season with salt and pepper. Spread over meat and sear in a roasting pan. Deglaze with wine, pour in broth and roast in oven for 2-2 1/2 hours. Turn roast as needed and add broth as needed.
3.
Take finished roast from oven, cut into slices and serve to taste with fresh herbs if desired.
