Preparation steps

1.

Rinse and trim the scallions and cut into thin rings. Rinse the parsley, shake dry and chop finely. Beat the eggs with the milk and season with salt, pepper and nutmeg. Mix in half of the scallions and parsley.

Rinse and halve the tomatoes. Mix the quark with the lemon juice, the remaining scallions, parsley and tomatoes, and season with salt and pepper. Heat the butter in a pan and cook four omelets, spreading the tomato mixture on the surface. Fold the omelets over the filling and serve immediately.
