- 12 small new Potato (scrubbed)
- 2 handfuls green String bean (trimmed)
- 3 Tbsps olive oil
- 1 Tbsp white wine vinegar
- 2 Red onions (sliced)
- 9 ozs cherry Tomatoes (halved)
- 4 Tbsps Caper (drained)
- 1 Basil

Preparation steps
1.
Bring a large pan of salted water to the boil and cook the potatoes until tender.
2.
Meanwhile, blanch the beans in boiling water for 3 minutes. Drain, refresh under cold running water and set aside.
3.
Mix together the oil and vinegar and season with salt and pepper to make the dressing.
4.
When the potatoes are cooked, drain well, refresh under cold water and cut the potatoes into quarters.
5.
Mix the potatoes, beans, onions, tomatoes and capers with the dressing in a large bowl. Roughly tear the basil leaves, reserving a couple of sprigs, and mix with the salad.
6.
Serve the salad in bowls garnished with the sprigs of basil.
