- 3 ½ cups Yardlong Beans (long beans), trimmed
- 2 Tbsps sesame oil
- 12 shrimp (peeled and deveined; roughly chopped)
- 1 red Bell pepper (cut into strips)
- 5 cups Bean sprout
- 1 cup unsalted Peanuts (roughly chopped)
- 1 Papaya (preferably green, grated)
- light soy sauce
- cayenne pepper
Preparation steps
1.
Blanch the beans in boiling, salted for about 4-5 minutes, until al dente.

Heat the oil in a frying pan and gently fry the shrimps for 1-2 minutes.
3.
Add the pepper, bean sprouts and beans and cook gently for 2 minutes.
4.
Add the papaya and the chopped peanuts and season to taste with soy sauce and cayenne pepper.
