- ½ lemon
- 3 eggs
- 250 grams Pastry flour
- 450 milliliters
- 100 grams sugar
- 500 grams Strawberries
- 1 pinch salt

Preparation steps

Rinse and pat dry the lemon half. Grate the zest and squeeze the juice.

Separate the eggs. In a bowl, combine the yolks, flour, 1 tablespoon lemon juice, the milk and 75 grams (approximately 2 3/4 ounces) sugar and mix to a smooth batter. Let stand 20 minutes.

Rinse and hull the strawberries.mix with remaining sugar and spread over 4 small ramekins.

Preheat the oven to 200°C (approximately 390°F). Beat the egg whites with 1 pinch of salt until stiff peaks form and gently fold into the batter. Spoon the batter over the strawberries and bake until golden brown, 10-15 minutes.
5.
Garnish the grains with the lemon zest.
