- 2 stalks Rhubarb
- 1 Lime
- 2 Tbsps butter
- 50 grams sugar
- 400 milliliters milk
- 8 heaping Tbsps Semolina flour
- 3 eggs
- 3 Tbsps sugar

Preparation steps

Rinse and halve the strawberries. For the gratin, bring the milk to a boil, sprinkle in semolina while stirring. Mix in sugar and let simmer for 10 minutes, stirring occasionally. Remove from heat. Separate the eggs, beat egg whites very stiff. Stir egg yolks into the semolina mixture, fold in beaten egg whites gently. Zest the lime.

Rinse and trim rhubarb, cut into pieces and sprinkle with sugar. In a pan, cook rhubarb with butter, 100 ml of water, lime juice and zest. Add strawberries, cook briefly. In a gratin dish, spread the semolina mixture and bake until golden in the oven at 200 degrees 15 minutes. Top with berries and serve warm.
