- 4 Nectarine
- 4 egg whites
- 4 egg yolks
- 50 grams sugar
- 1 tsp lemon juice
- 400 grams Cream quark (40% fat)
- 50 grams Whipped cream
- 20 grams Pastry flour
- butter (for the mold)
- powdered sugar (for dusting)
- Red currant (for decoration)

Preparation steps

Rinse the fruit and pat dry. Cut the strawberries in half. Cut the nectarines cut in half, remove the pits, and cut into wedges.

Beat the egg whites to stiff peaks. Preheat the oven to 180°C (approximately 350°F). Butter four ramekins or gratin dishes.
Mix the lemon juice with quark, heavy cream and flour. Stir the egg yolks and sugar into the quark. Carefully fold in the egg whites. Spread the quark mixture in the ramekins, top with strawberries and necatrines, and bake 25 minutes.
To serve, dust with powdered sugar and garnish with currants.
