- Dough (for 8 pieces)
- 250 grams Pastry flour
- 3 tsps Baking powder
- ¼ tsp white peppers (freshly ground)
- 2 tsps sugar
- ½ tsp salt
- 50 grams soft butter
- 1 cup milk
- 1 egg yolk
- to serve
- 100 grams Strawberries
- Strawberries
- 200 grams clotted cream (English specialty) or double cream
Preparation steps

Combine all dough ingredients except the milk and mix. Knead and add as much milk as needed for the dough to hold together well.

Roll out on a floured surface about 2.5 cm (approximately 1 inch) thick, and cut out circles with round ramekins (about 5 cm) (approximately 2 inches). Place on a baking sheet lined with parchment paper, brush with beaten egg yolk and bake in an oven preheated to 200°C (approximately 400°F) until golden brown, 12 - 14 minutes. Allow to cool.

To serve, cut the scones horizontally into three slices and layer with the clotted cream (or the slightly whipped double cream) and strawberry slices as desired.

Serve with tea.
