150 grams Red Beans (soaked)
250 grams Strawberries
1 Lime
40 grams short grain rice
100 milliliters milk
60 milliliters Whipped cream
3 Tbsps honey
1 Tbsp balsamic vinegar

Preparation steps

Cover soaked beans in plenty of water with a little salt and cook until tender, approximately 40 minutes. Drain beans. Meanwhile, bring rice, milk and cream to a boil in a saucepan then simmer until rice is tender.

Rinse, core and slice strawberries.

Cut the lime in half. Squeeze juice from one half and cut the other half into slices. Stir balsamic vinegar and half the honey into the lime juice until smooth. Mix with strawberry and bean mixture and season to taste. Mix the remaining honey into the rice pudding. Divide the rice pudding between four glasses and top with strawberries and beans. Garnish with lime wedges and strawberry slices.
