350 grams pork Escalope
salt
freshly ground peppers
1 Tbsp clarified butter
1 small red Bell pepper
1 small yellow Bell pepper
1 small green Bell pepper
1 bunch scallions
2 Tbsps butter
50 milliliters dry white wine
1 tsp granulated Broth
parsley (for garnish)

Preparation steps

1.

Cut the meat into bite-sized pieces and season with salt and pepper. 

2.

Rinse the peppers, cut in half, remove the stems, seeds and pith and then cut into strips crosswise. 

3.

Rinse the scallions, trim and cut diagonally into rings.

4.

In a wok or large frying pan, heat the butter and sauté the scallions until softened. Sprinkle with the broth and season with salt and pepper. Add the wine and peppers and cook over medium heat until tender.

5.

Meanwhile, heat the remaining oil in a large frying pan or wok and sear the meat until golden brown on all sides, around 6 minutes. Season with salt and pepper.

6.

Arrange the meat, scallions and peppers on serving plates and serve sprinkled with parsley.
