Stir-Fried Ostrich Meat with Noodles and Vegetables
Ingredients
- For the marinade
- 1 garlic clove
- 5 Tbsps soy sauce
- 4 centiliters sherry
- 2 Tbsps sesame oil
- 1 pinch chili peppers
- For the noodles
- 400 grams Ostrich (food group) (steak)
- 300 grams Udon Noodle
- 300 grams green Asparagus
- 100 grams Snow peas
- 3 carrots
- 2 centimeters ginger (or more, according to taste)
- 3 Tbsps sesame oil
- 2 Tbsps Oyster sauce
- 75 milliliters Vegetable broth
- 2 Tbsps Sesame seeds
- salt
- freshly ground peppers
Preparation steps
Peel the garlic and finely chop. Mix with soy sauce, sherry, sesame oil and chile. Cut the ostrich meat into strips. Place half of the marinade with the meat in a plastic bag, rub slightly and marinate 1 hour in the refrigerator.
Cook the udon noodles according to the package directions, drain, rinse and set aside. Rinse the asparagus, trim and cut diagonally into 4-5 cm (approximately 2 inch) long pieces. Rinse and peel the carrots and slice lengthwise into strips. Peel ginger and grate and add to the remaining marinade.
Heat 1 tablespoon oil in a wok and stir-fry the marinated meat until brown, remove from the wok and heat the remaining oil. Stir-fry the asparagus for 2-3 minutes, add the remaining vegetables and cook for an additional 1-2 minutes. Add oyster sauce, broth, and remaining marinade and simmer 2-3 min. Add the meat and noodles, heat through and season with salt and pepper. To serve, distribute into bowls and sprinkle with sesame seeds.
