- 1 Savoy cabbage
- salt
- 3 shallots
- 1 garlic clove
- 50 grams streaky Bacon
- 1 Tbsp butter
- 500 milliliters vegetable stock
- 150 grams cream
- freshly ground pepper
- Nutmeg
- parsley

Preparation steps

Halve cabbage and remove core. Cut cabbage into thin strips and blanch in boiling salted water, 3-5 minutes. Rinse cabbage with cold water and drain well. Peel and finely chop shallots and garlic. Finely dice bacon. In a large pot, sauté bacon in melted butter. Add shallots and garlic and cook until softened.

Gently squeeze cabbage dry and add to the pot along with vegetable stock. Cook until the liquid has evaporated. Add cream and simmer until thickened. Season with salt, pepper and nutmeg. Rinse parsley, shake dry, strip leaves from stems and finely chop. Serve cabbage sprinkled with parsley.
