Preparation steps

Soak the roll in lukewarm water. Peel the shallot, finely chop and cook in hot butter until translucent. Squeeze the excess water from bread and tear into bite-sized pieces. Mix bread with eggs, marjoram and ground meat. Add breadcrumbs a little at a time until mixture is moldable. Season to taste with ground caraway seeds, salt and pepper.

Preheat the oven to 180°C (approximately 350°F) convection.

Rinse cabbage leaves, remove center veins and blanch leaves for 2-3 minutes in boiling salted water. Squeeze and pat dry.

Line a terrine mold with slightly overlapping slices of bacon, allowing slices to extend over sides. Repeat process with cabbage leaves. Shape the meat mixture into a loaf and place on top of the cabbage in the mold. Wrap the cabbage and bacon over the meatloaf and bake in preheated oven for about 60 minutes. Cut into slices and serve.
