4 fresh Artichoke (rinsed)
2 lemons (halved)
4 cups water (or chicken or vegetable stock)
1 Tbsp Oil
kosher salt (to taste)

Tips for eating artichokes: 1. Pull off outer petals one at a time. Dip the pulpy end into lemon butter. Place in mouth with the pulpy side facing toward bottom teeth. Lightly bite the petal and pull down over bottom teeth. The pulpy part will remain in your mouth to eat. Discard the rest of the petal. 2. Continue tis process until all petals are eaten. Once you reach the center cone, remove the choke that protects the heart. Remove thistle fuzz covering with a spoon or knife. Once removed, cut the heart in pieces and dip in lemon butter. Steamed artichokes may be served hot or cold.

Preparation steps

Cut off the stems close to the base. Pull off petals around the base that are small and tough. Cut off the top inch of the artichoke and rub with half a lemon to preserve the green color.

In a large saucepan bring liquid, oil and sliced lemon to a boil over medium-high heat.

Add artichokes to the steaming liquid, bottom up. Cover, reduce heat and simmer for about 30 minutes. The artichokes are done when you can insert a knife into the base and there is no resistance. Remove from pan and drain. Season with salt and pepper.

Whisk butter and lemon juice together and place in 4 ramekins. Place artichokes on small plates and serve with lemon butter.
