- 4 Salmon (each 140 grams)
- 2 Tbsps honey
- 3 Tbsps olive oil
- Sea salt
- cayenne pepper
- 1 Grapefruit (red)
- 1 shallot
- 1 Tbsp honey
- 150 milliliters Grapefruit juice
- ½ tsp cornstarch
- 1 tsp green peppercorns
- for garnish

- Lemon basil

Preparation steps

Rinse the salmon and pat dry. Whisk together the honey and 2 tablespoons olive oil, season with salt and cayenne pepper and brush the salmon. Wrap in parchment paper and steam over hot steam for about 10 minutes.

For the sauce, peel the grapefruit and coarsely chop. Peel the shallot, chop finely and cook in the remaining oil. Mix in the grapefruit and honey and deglaze with juice. Bring to boil, thicken with the cornstarch mixed in a little water, remove from the heat and puree through a sieve. Add the peppercorns, allow to cool and season with salt.

Unwrap the salmon, let cool and serve lukewarm with sauce on plates. Serve garnished with lemon slices and lemon basil.
