400 grams Green cabbage

1 Tbsp butter
2 Tbsps dark soy sauce
1 Tbsp Worcestershire sauce
freshly ground peppers
4 Steak fillet (Loin, each 180 grams)
clarified butter (for frying)

Preparation steps

Rinse cabbage and separate the leaves. Cut out tough veins from leaves. Bring a large pot of salted water to a boil and blanch the cabbage leaves in batches for about 1-2 minutes. Lift with a skimmer from the water and drain on paper towels. Heat the butter in a pan and sauté cabbage leaves 1-2 minutes, deglaze with soy sauce and Worcestershire sauce, season to taste and remove from heat.

Rinse steaks and pat dry. Season with salt and pepper. Heat plenty of butter in a skillet, add steaks and cook on both sides 4-6 minutes.

Serve steaks with the cabbage.
