Ingredients

for

For the cabbage
1 small Savoy cabbage about 500 g (approximately 1 pound)
2 shallots
1 Tbsp butter
salt
freshly ground peppers
½ tsp sweet ground paprika
50 milliliters Vegetable broth
For the steaks
4 Sirloin steak about 200 g (approximately 7 ounces) each
2 Tbsps vegetable oil
salt
freshly ground peppers
1 Tbsp scallions

Preparation steps

1.

Preheat the grill. 

2.

Remove the outer leaves from the cabbage, quarter, remove the core and cut into thin strips. 

3.

Peel the shallot and slice thinly. Heat the butter in a large pan and sauté the cabbage and shallot briefly. Season with salt, pepper and paprika. Deglaze with the vegetable broth and simmer for about 7-10 minutes, until most of the liquid has evaporated.  

4.

Trim the fat from the steaks, brush with olive oil and season with salt and pepper. Grill the steaks for about 3-5 minutes per side, until desired level of doneness is reached. 

5.

Evenly divide the cabbage between 4 plates and top with the steaks. 

6.

Garnish with chopped chives and serve.
