- ½ tsp minced garlic cloves
- ¼ tsp Italian seasoning (to taste)
- ¼ tsp ground Cumin
- 2 Tbsps good-quality olive oil (divided)
- 1 medium, sweet pepper cut into strips (yellow or red)
- 1 small onion (peeled and sliced)
- 3 cups beef, top Sirloin steak (cut into thin strips)
- 4 whole wheat Tortillas (warmed)
- 1 handful shredded Lettuce
- 1 ripe Tomato (rinsed and diced)
- ½ Cucumber (peeled and cut into thin spears)
- ⅓ cup minced, fresh cilantro
- ⅓ cup ranch dressing
- salt (to taste)
- freshly ground Black pepper (to taste)

In a large bowl, combine the garlic, Italian seasoning, cumin and 1

tablespoon oil. Add the sliced peppers and onion; toss to coat.

Place tossed veggies in a single layer in an ungreased baking pan. Broil 4 to 6 inches from the heat for 8 to 10 minutes or until tender and lightly browned, stirring once half way through the broiling process.

Meanwhile, in a large skillet, saute steak in remaining oil for 3 to 6 minutes or until desired doneness.

Arrange lettuce, tomato, cucumber, and cilantro on each tortilla. Drizzle with salad dressing and season to taste with salt and pepper. Top with vegetables and steak. Roll up tightly and serve.
