- 2 Tbsps sunflower oil
- 21 ozs Sirloin steak (sliced)
- 1 large Red pepper (sliced)
- 1 large, yellow pepper (sliced)
- 1 onion (finely sliced)
- 2 tsps Fajita Seasoning
- 8 Flour tortillas
- ⅔ cup Sour cream (to serve)
- ⅔ cup Tomato salsa (to serve)
- paprika
- salt
- freshly ground Black pepper

Wet each tortilla with a sprinkle of water to prevent them from sticking in the hot pan.
Preparation steps
1.
Heat the oil in a large frying pan set over a moderate heat until hot. Season the steak and fry in the hot oil for 4 minutes, turning once.

Add the peppers and onion, and continue to fry for 4 minutes, tossing occasionally. Add the fajita seasoning, stir well, and fry for a further 3 minutes over a reduced heat.

Heat a dry frying pan over a moderate heat until hot. Dry-fry the tortillas for 20-30 seconds, flipping once, until soft and warmed through.
4.
Fill with the beef and vegetables, and serve with the sour cream garnished with paprika as well as the salsa.
