- 3 egg whites
- 1 pinch salt
- 300 grams sugar
- 450 grams ground almonds
- 1 tsp cinnamon
- 1 pinch Ground clove
- 1 Tbsp Red currant jelly
Preparation steps

In a bowl, beat the egg whites with the salt until stiff. Continue beating while adding the sugar 1 spoonful at a time until thick and glossy. Reserve 5 tablespoons for the glaze. In another bowl, stir the almonds with the cinnamon, cloves and currant jelly. Gently fold into the egg whites until thoroughly combined.
Preheat a convection oven to 150°C (approximately 300°F).

Line the baking sheets with parchment paper. Roll the dough to 5 mm (approximately 2 inch) thick on a floured surface. Cut out stars and place on the baking sheet. Spread the reserved meringue onto the cookies using a sharp knife. Bake for 20 minutes. Remove from oven and allow to cool.
