Preparation steps

Peel garlic and squeeze through a garlic press into a bowl. Rinse the cucumber, cut in half lengthwise, remove seeds and cut into small cubes. Add yogurt to the garlic in the bowl and mix with cucumber cubes and lemon juice. Season with salt and pepper. Rinse parsley and cilantro, shake dry, pluck leaves and chop finely.

Rinse soy bean sprouts under cold water in a colander and drain well. Then blanch for 1-2 minutes in boiling salted water, drain, rinse in ice cold water and drain well again. Rinse, trim and cut radishes into cubes. Mix with sprouts, vinegar and oil and season with salt and pepper. Spread tzatziki into 4 glasses, sprinkle herb mixture over it and top with sprout salad. Serve immediately.
