- ½ cup unsalted butter
- ½ cup xylitol
- 2 large eggs (separated)
- ½ tsp vanilla extract
- ¾ cup coarse Semolina
- 1 tsp Baking powder
- ½ cup Almond flour
- 1 tsp lemon zest (grated)
- 1 pinch salt
- ¼ tsp lemon juice
- ½ cup raisins

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4 individual baking dishes.

Beat the butter in a mixing bowl until soft. Add the xylitol a little at a time and beat well.
3.
Add the egg yolks, one at a time, beating after each addition. Add the vanilla and continue beating for 5 minutes.

Combine the semolina, baking powder, almonds, and lemon zest.
5.
Slowly add the semolina mixture to the butter mixture, beating to combine thoroughly.
6.
Whisk together the egg whites, salt and lemon juice until stiff.
7.
Gradually fold the egg whites into the semolina mixture until combined, then fold in the raisins.
8.
Pour into the dishes and bake for 20-30 minutes until set.
