- 300 grams baby peas
- 150 grams Spinach
- 2 carrots
- 2 stalks Celery
- 1 centimeter fresh ginger
- 2 Tbsps Rice wine vinegar
- 1 Tbsp Lime juice
- 1 tsp black Sesame seeds
- 5 Tbsps olive oil
- salt
- freshly ground peppers
- ½ tsp Palm sugar

Preparation steps

Trim pea pods, blanch in boiling salted water for 3-4 minutes until al dente, remove, rinse in cold water and drain. Trim the spinach, rinse and spin dry. Peel carrot and cut into long thin sticks. Rinse celery, trim and cut into long (about 5 cm/approximately 2 inch), thin strips.

Peel ginger and finely chop. For the dressing, mix vinegar, lime juice, ginger and sesame seeds thoroughly and gradually mix in the oil with a whisk. Season with salt, pepper and sugar and mix with the salad ingredients. Let marinate briefly. Arrange on plates or in bowls and serve.
