- For the salad
- 250 grams fresh Spinach
- Lollo rossa
- 150 grams Corn (canned)
- 4 small Goat cheese
- salt
- coarsely ground peppers
- For the dressing
- 2 Tbsps Red wine vinegar
- 4 Tbsps olive oil
- ½ tsp Mustard
- salt
- peppers

Preparation steps
1.
For the salad, rinse the spinach and lettuce well and tear into bite-sized pieces. Drain the corn.
Arrange the spinach and lettuce in four salad bowls.

Place the corn in an ovenproof dish, mix with crumbled goat's cheese and allow to melt under the broiler in the oven.
3.
For the dressing, mix the ingredients together and drizzle over the salad.
Place a large spoonful of the corn-goat cheese mixture in the middle of the salad and serve seasoned with freshly ground pepper.
