1 small Hokkaido pumpkin
8 Plum
200 grams shelled Walnut
5 shallots
2 tart Apple
250 grams fresh baby Spinach
150 grams Grape
Walnut oil
salt
freshly ground peppers
lemons (Juice)
apple cider vinegar

Preparation steps

1.

Rinse and dry the pumpkin. Remove the stem, cut the pumpkin in half lengthwise and remove the seeds. Cut unpeeled into not too thin wedges. Cook the pumpkin In plenty of boiling salted water until al dente,  6-8 minutes. Drain and let cool. Rinse and halve the plums, remove the pits and quarter the plums.

Shallots peel and cut into thin rings. Peel the apples, cut in half, remove seeds and cut into small cubes. Drizzle with lemon juice. Coarsely chop the walnuts. Rinse the spinach and drain. Rinse the grapes, pluck them from their stems and halve.

In a large bowl,  whisk together 5 tablespoons of walnut oil and 2-3 tablespoons apple cider vinegar, season with salt and pepper. Add the pumpkin, plums, grapes, walnuts, diced apple, shallots and spinach to the bowl and toss well. Season with salt and pepper. Arrange on plates and serve immediately.
