- 2 red onions
- 2 red Bell pepper
- 400 grams Pumpkin (such as muscat or hokkaido)
- olive oil
- 1 splash dry white wine
- 350 grams Orzo
- salt
- 150 grams Feta
- peppers (freshly ground)
- 3 Tbsps Basil
- lemon juice

Preparation steps
1.
Peel and thinly slice the onions. Rinse and halve the peppers. Remove the seeds and membranes and cut into wide strips. Cut the flesh of the pumpkin into bite-size pieces.

Heat 2 tablespoons of oil in a pan, and sauté the vegetables, stirring occasionally. Add the wine, and simmer for 10 minutes over medium heat.

Cook the orzo in salted boiling water until al dente.

Coarsely crumble the feta cheese.
5.
Season the vegetables with salt and pepper, remove from heat and let cool. Drain the orzo, rinse with cold water, and mix with the feta, vegetables, and basil. Season to taste with lemon juice and serve on plates.
