- 200 grams Spinach
- salt
- 100 grams Mascarpone
- 250 grams Quark
- 150 grams grated Mountain cheese (such as Gryuere)
- 2 egg yolks
- 2 eggs
- 80 grams breadcrumbs
- salt
- freshly ground peppers
- freshly grated Nutmeg
- 1 onion
- 2 Tbsps butter
- 80 grams raw ham (sliced)
- softened butter (for the pan)
Preparation steps
Rinse spinach abd blanch in boiling salted water briefly. Drain and squeeze well, chop finely. Mix with mascarpone, quark and 100 grams (approximately 3 1/2 oucnes) of cheese. Add egg yolks, eggs and breadcrumbs, season with salt, pepper and nutmeg and knead well.
With wet hands, make 12-16 small dumplings and refrigerate for 15 minutes. Bring plenty of salted water to a boil and cook dumplings for about 15 minutes.
Peel onion and chop. Heat butter in a pan and saute onion until golden brown on low heat. Cut ham into strips. Arrange drained dumplings in a buttered baking dish. Spread with ham pieces and onion, sprinkle with remaining cheese.
Bake in preheated oven at 200°C (approximately 400°F) for about 5 minutes. Remove from the oven and serve.
