- 250 grams day-old white bread
- 100 milliliters lukewarm milk
- 500 grams Spinach
- salt
- 2 eggs
- 75 grams Pastry flour
- 20 grams grated Parmesan
- 1 generous pinch lemon zest
- freshly ground peppers
- freshly grated Nutmeg

Cut off bread crust and cut bread into small cubes, soak in warm milk in a bowl.

Rinse spinach, remove tough stems and blanch briefly in boiling salted water.

Drain and squeeze, chop coarsely. Combine spinach, eggs, flour, well-squeezed bread and Parmesan, mix well. Season with lemon zest, salt, pepper and nutmeg.

Remove dumplings with a tablespoon and shape into balls with wet hands.

Bring a large pot of salted water to a boil. Reduce temperature and cook dumplings for about 5 minutes. As soon as they rise to the surface, remove with a slotted spoon and drain. Heat butter in a pan and toss dumplings briefly. Serve with tomato sauce, if desired.
