12 bay scallop
2 Tbsps lemon juice
salt (to taste)
freshly ground peppers (to taste)
1 pinch cayenne pepper
2 scallions
In addition
cilantro (sprigs)
1 onion
1 ¾ cups fish stock (or chicken stock)

Preparation steps

1.
Rinse scallops thoroughly under running water.
2.
Sprinkle the scallops with lemon juice and keep cool.
3.
Wash the peppers and remove the seeds and finely dice. Wash and trim the spring onions and finely chop the white and light green parts.
4.
Place the scallops in a steaming basket (bamboo basket) and scatter with the prepared vegetables.
5.
Fill the steamer pan to a depth of about 3/4 of an inch with fish stock, add a few coriander stalks and slices of onion and bring to the boil. Then place the steaming basket in position, cover and cook for 5-6 minutes. Garnish with fresh cilantro leaves.
