Almond snaps are a great snack for those with a sweet tooth, because they are high in sugar but they are also healthy because of the protein and healthy fat content of the almonds.
You can use other nuts if you prefer them or have an allergy.

Ingredients
for
20
- Ingredients
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup raw almonds
- 1 tsp salt
- 1 tsp butter
- 1 tsp pure vanilla extract
- 1 tsp baking soda
Preparation steps
1.
Line a baking sheet with parchment paper.
2.
In a large glass bowl, stir together the corn syrup and sugar. Place in the microwave and cook on high for 3 minutes.
3.
Stir in the almonds and salt; return the mixture to the microwave and cook for another 2 1/2 minutes. Watch carefully to make sure the mixture does not burn. Stir in the butter and vanilla and microwave for an additional 30 seconds.
4.
Remove the bowl from the microwave and immediately stir in the baking soda. This will cause the mixture to foam slightly. Immediately pour the mixture onto the prepared pan and spread it out quickly with the back of a spoon or spatula. Cool for about 30 minutes or until the mixture hardens, break into pieces and serve.
