- 3 Tbsps olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 cup Risotto
- 1 red Bell pepper (finely chopped)
- Saffron (threads)
- 7 ozs Chorizo (sliced)
- 3 cups chicken stock
- 1 cup frozen peas
- 2 Tbsps chopped parsley

1 Cutting board, 1 Small knife, 2 Bowls, 1 Peeler
Preparation steps
1.
Heat the oil in a wide pan and gently cook the onion until soft but not brown. Add the garlic, cook for 1 minute then stir in the rice.

Add the chopped pepper, cook for 3 minutes then add the saffron and the chorizo. Cook until the fat starts to run from the chorizo.
3.
Gradually pour in the stock and simmer until the stock has been absorbed and the rice is tender. Add a little water if needed.
4.
Add the peas, cook for 5 more minutes then season with salt and pepper and stir in the parsley.
