- 6 Tbsps Oil
- 5 cups Minced Beef
- 2 cups Meat stock
- 2 onions (finely chopped)
- 3 cloves garlic cloves (minced)
- 2 sticks Celery (chopped)
- 1 red chili pepper (depending on taste), finely chopped
- 2 cups canned, red Kidney beans (drained)
- 4 green peppers (diced)
- ½ tsp ground Cumin
- salt
- freshly ground peppers
- 2 Tbsps chopped parsley

Preparation steps

Heat a little oil in a very large frying pan and brown the meat, breaking it up to brown right through.

You may need to do this in batches.

Then return all the meat to the pan with the rest of the oil and add 200-300 ml stock. Cook for 10-20 minutes, until the liquid has evaporated. Stir in the diced peppers, onions, chilli, garlic and celery and cook briefly.

Add the rest of the stock, cover and cook over a low heat for a further 30 minutes or so.
5.
At the end of the 30 minutes, add the red kidney beans, season with salt and pepper and add cumin to taste. Cook for a further 15 minutes.
