- 2 Tbsps sunflower oil
- 2 Tbsps unsalted butter
- 2 small Rabbit (jointed)
- 4 sticks Celery (peeled and chopped)
- 2 cups Porcini mushroom (sliced)
- 1 cup Mushrooms (brushed clean)
- ½ cup dry white wine
- 2 cups chicken stock
- thyme
- 3 bay leaves
- salt
- peppers

Preparation steps
1.
Melt the half of the butter with the oil in a large casserole dish set over a moderate heat until hot.

Season the rabbit pieces and seal in batches until golden brown in colour all over. Remove from the dish and transfer to a slow cooker before reduce the heat under the dish a little.

Add the remaining butter and sweat the celery, wild button mushrooms and porcini mushrooms for a few minutes before deglazing the dish with the white wine. Stir well then add the herbs and stock.

Pour over the rabbit in the slow cooker and cover with a lid. Cook on a medium setting for 6 hours until the rabbit is cooked through.
5.
Adjust the seasoning to taste before spooning into a casserole dish with a slotted spoon. Serve immediately.
