- 2 Tbsps Oil
- 4 rashers lean Bacon (diced)
- 1 large onion (chopped)
- 2 carrots (diced)
- 2 cloves garlic cloves (crushed)
- 2 large potatoes (peeled and diced)
- 2 Tbsps Madras curry paste
- 1 tsp ground Turmeric
- ½ tsp Chili powder
- 14 ozs canned Tomatoes
- vegetable stock
- 16 ozs cooked Turkey (cubed)
- salt
- peppers
- To garnish
- chopped cilantro

Preparation steps
1.
Heat the oil in a large pan and cook the bacon until browned. Remove and set aside.
2.
Add the onion to the pan and cook slowly over a low heat for about 5 minutes until softened.
3.
Add the carrots, garlic and potatoes and cook for 5-6 minutes until starting to soften. Stir in the curry paste, turmeric and chilli powder and cook for 1 minute, stirring to coat the vegetables in the curry paste.
4.
Add the tomatoes and enough stock to cover the vegetables. Bring to a boil and simmer for 20 minutes, until the carrots and potatoes are tender.
5.
Stir in the bacon and turkey and season to taste with salt and pepper.
6.
Reheat and ladle into serving bowls. Garnish with coriander.
