- 2 Sea bass (or other fish, each about 500-600 grams; ready to cook)
- 4 garlic cloves
- 2 chili peppers
- 1 Tbsp grated Lemon peel
- 2 fresh bay leaves
- olive oil (For brushing)
- salt
- freshly ground peppers
- foldable Grill rack (for whole fish, if necessary)

Preparation steps
1.
Rinse fish and pat dry. Score about 8 times in diamond patter on each side.
2.
Peel garlic and chop finely. Rinse and halve chile peppers, remove seeds and ribs and chop finely. Cut bay leaves into thin strips.
3.
Brush fish with oil, season with salt and pepper and rub with garlic. Place on an oiled grill grate. Roast under a hot broiler for about 4-5 minutes per side, watching carefully.
4.
Arrange fish on banana leaves, if desired. Mix chile pepper, garlic and lemon zest, sprinkle on fish. Sprinkle with bay leaves and serve.
