- 14 ozs Pork
- 2 ⅔ cups clam
- 2 Tbsps Oil
- ½ cup white wine
- 1 clove garlic cloves
- salt
- freshly ground peppers
- 14 ozs onions
- 2 Tbsps clarified butter
- 1 Tbsp paprika (noble sweet)
- 1 tsp paprika (hot)
- 2 Tbsps tomato puree
- 1 beefsteak Tomato (skinned, deseeded and diced)
- 1 cup fish stock
- ½ bunch Basil

Preparation steps

Peel and finely dice the onions. Cut the meat into bite-size pieces and season with salt and pepper. Heat the clarified butter and quickly brown on all sides over a fairly high heat and take out of the pan. (You may need to do this in batches)

Then saute the onions in the frying fat. Return the meat to the pan, stir in the tomato puree and season with paprika. Saute briefly, stirring, then add the meat broth and bring to a boil. Cover and simmer for about 1 hour, stirring from time to time. Add the diced tomato about half-way through cooking time. Peel and finely chop the garlic.

Put the clams in salted water for two to three hours and shake occasionally to remove any sand. Then rinse under running water. Heat the oil in a skillet and brown the garlic.

Add the clams and saute over a low heat, until the clams open. Add the wine and briefly bring to a boil.
5.
When the meat stew is cooked mix in the clams and check the seasoning. Add the finely shredded basil.
6.
Serve with white bread or rice.
