Spicy Chicken Flatbread Sandwich
- For the chicken
- 2 chicken escalope (batted out to 1cm thickness)
- 3 Tbsps plain flour (seasoned)
- 2 eggs (beaten)
- 1 tsp ground Cumin
- 1 tsp ground cilantro
- ½ tsp Turmeric
- 1 tsp Garam Masala
- 2 cups dried breadcrumbs
- ⅜ cup vegetable oil
- In addition
- ½ Cucumber (sliced)
- 2 Iceberg lettuce
- 2 Focaccia (or pitta breads, split)
- For the sauce
- 4 Tbsps plain Yogurt
- ¼ bunch mint (finely shredded)
- 4 Tbsps Mango chutney
Spicy Yoghurt Sauce Try stirring lime pickle into the yoghurt
Dip the chicken in the flour, eggs, and then breadcrumbs mixed with the spices. Shake off any excess.
Heat the oil in a deep-sided pan and shallow-fry the chicken on both sides until golden and crisp.
Fill the split breads with mango chutney, cucumber and lettuce, then top with the chicken. Spoon over the yoghurt and serve.
