- 1 ½ tsps active dry yeast
- 2 tsps sugar
- 1 ½ tsps xanthan gum
- ¾ tsp salt
- ¾ cup warm milk
- 1 Tbsp olive oil

Preparation steps
1.
Stir together the dry ingredients) until well combined in a mixing bowl. Make a well in the middle.

Pour in the milk and oil and mix to a dough. If the mixture is too sticky add a little more flour. Form into a ball.

Cover the bowl and place in a warm place to rise for 1-1 1/2 hours, until doubled in size.

Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a baking tray.
5.
Place an ovenproof dish half filled with water in the bottom of the oven. Place the baking tray in the oven.
6.
Divide the dough into 4 balls. Pat each ball down with your fingers on a lightly floured surface until flat.
7.
Dust each side lightly with flour and place on the baking tray.
8.
Bake for 8-10 minutes or until light browned. Place on a wire rack to cool.
9.
Split open the breads to form a pocket and add the filling. Garnish with thyme.
