This delicious flatbread provides all the flavor of a classic BBQ chicken pizza with much less calories and fat.
If you're not on a low-gluten diet, you can use any variety of crust you want. Quinoa or cauliflower crust are both great options that are much healthier than traditional pizza dough.

- 2 gluten-free pizza crusts
- 1 cup Barbecue sauce
- 1 ¼ cups grated Mozzarella
- 1 cup cherry Tomatoes (halved)
- 1 green pepper (thinly sliced)
- 2 large, cooked, skinless Chicken breasts (sliced)
- 1 cup canned Pineapple (drained)
- 2 Tbsps olive oil
- 1 red Chard leaf
- 2 cups Watercress
- 1 cup Lettuce
- salt
- freshly ground Black pepper
Preparation steps

Preheat the oven to 450°F and place two large, round baking trays in the oven to preheat.

Spread the pizza bases with barbecue sauce and top with the grated mozzarella.

Arrange the cherry tomatoes, pepper, chicken, and pineapple chunks on top.
4.
Drizzle with olive oil and season with salt and pepper. Bake for 8-10 minutes until the bases are cooked through and the cheese has melted.
5.
Remove from the oven and serve immediately with a garnish of chard, watercress, and lettuce leaves.
