- 2 Tbsps sunflower oil
- 1 Tbsp mild Curry powder
- 1 Zucchini (sliced)
- 2 carrots (peeled and sliced)
- 1 white onion (chopped)
- 2 cups green String bean (halved)
- 2 cups Chestnut mushroom (halved)
- 1 Broccoli (prepared into florets)
- 1 cup baby Sweet corn
- 1 red pepper (sliced)
- 2 cups vegetable stock
- 250 meters Coconut milk
- 2 cups baby Spinach (washed)
- salt
- freshly ground Black pepper

Serve this curry with bowls of brown or basmati rice on the side.
Preparation steps
1.
Heat the oil in a casserole dish set over a medium heat until hot. Add the curry powder and fry for 30 seconds.

Add the courgette, carrot, onion, beans, mushroom, broccoli, sweetcorn, pepper, and stir well.
3.
Cover with the stock and coconut milk. Simmer for 10 - 15 minutes until the vegetables are tender.
4.
Stir in the spinach and cook for a further 2 minutes until wilted. Season to taste with salt and pepper.
5.
Ladle into bowls and serve.
