3.333 cups minced mixed Meat
1 onion (diced)
1 clove garlic cloves (diced)
1 tin red Kidney beans (425 g | 2 cups)
1 tin peach kernel (212 g | 1.25 cups)

1 cup Salsa (store bought)
6 large Tortillas
0.333 cup Bacon (finely diced)
1 ½ cups Cheddar cheese (grated)
1.333 cups Sour cream

Preparation steps

Preheat the oven to 200°C (180° fan) | 400F | gas 6.

Heat the oil and fry the mince, breaking it up to brown right through. Add the onion and garlic and fry briefly. Drain the beans and sweetcorn kernels and add to the mince. Season with salt, pepper and chilli powder.

Wash, quarter and deseed the tomatoes. Dice the flesh of 1/2 a tomato very finely. Cut the rest of the tomatoes into large dice and add all the tomato to the mince mixture. Add the salsa sauce and mix well.
4.
Fill the tortillas with 2/3 of the mince mixture, roll up and cut in half. Spread the remaining mince mixture in the base of a shallow baking dish and place the filled tortillas on top.
5.
Mix together the grated cheese and sour cream. Spread on top of the enchiladas and bake in the preheated oven for about 30 minutes until bubbling and golden on top.
