- 2 Tbsps olive oil
- 1 onion (chopped)
- 1 red Bell pepper (seed removed, chopped)
- 1 large Tomato (chopped)
- 16 ozs lean Ground beef
- 1 tsp Chili powder
- 1 tsp dried oregano
- 1 small, red chili pepper (seeds removed, finely chopped)
- 14 ozs canned Tomatoes
- 16 ozs canned, red Kidney beans (in chili sauce)
- 1 oz Dark chocolate (80% cocoa solids)
- salt (to taste)
- To garnish
- 3 Tbsps Sour cream
- 3 scallions (cut into rings)
- To serve
- Corn Biscuit

Preparation steps
1.
Heat the oil in a large heavy-based pan and add the onions, peppers and tomatoes. Cook over a medium heat until soft, then increase the heat and add the minced beef, stirring for a few minutes until browned. Reduce the heat and add the chilli powder and oregano.

Add the chopped chilli to the pan with the kidney beans and canned tomatoes. Stir well.

Stir in the chocolate. Season well with salt, cover the pan and cook gently for 45-60 minutes, until thick. stirring from time to time to avoid the mixture sticking to the bottom of the pan.
4.
Spoon into warm serving bowls. Put a spoonful of soured cream on top and sprinkle with spring onion rings.
5.
Serve with corn bread.
