- 1 Vanilla bean (seeds)
- 1 pinch Cardamom powder
- 1 pinch ground cinnamon
- ⅔ cup cream (48% fat)
- 2 cups plain Yogurt
- 3 Tbsps liquid honey
- ¼ cup Pomegranate juice
- 1 pomegranate (seeds)
- To decorate

Preparation steps
1.
Put the vanilla seeds, spices and cream in a pan and bring to a boil. Cover and leave to stand until cooled completely.
2.
Strain through a sieve into a bowl. Cover and chill.
3.
Mix together the yoghurt, honey and pomegranate juice.
4.
Whisk the chilled spiced cream until thick and fold into the yoghurt mixture.
5.
Churn in an ice cream maker for about 25 minutes. Alternatively, put into a freezerproof container, cover and freeze for 4 hours, whisking with a fork every 30 minutes during the first 2 hours.
6.
Spoon the ice cream into serving glasses, reserving a little for piping.
7.
Spoon the reserved ice cream into a piping bag with a shell nozzle and quickly pipe a swirl on top of each glass.
8.
Sprinkle with pomegranate seeds and decorate with mint leaves.
