- 2 bags sweetened Coconut flakes (400 g | 14 oz each)

- orange Food coloring
- 2 black Licorice string (cut into small pieces)
- 8 Marshmallow (roasted)
- 8 Chocolate wafer
- powdered sugar

Preparation steps

You will need three ice cream scoops in varied sizes. Line a baking sheet (one that fits in your freezer) with parchment paper. Scoop the ice cream, rounding the scoops, until you have 8 of each size (24 scoops total). Place the scoops on the prepared baking sheet and place pan in the freezer to harden for 15 to 20 minutes.

Place flake coconut in shallow bowl or pie plate, and roll harden ice cream in coconut. Place coconut covered ice cream scoops on the pan and return to freezer.

Add one drop of food coloring at a time to the marzipan until the correct coloring is attained. Fashion eight carrot noses, using a paring knife to make ridges. Remove 1 small scoop of ice cream at a time from the freezer and decorate using licorice pieces for the eyes and mouth and a marzipan carrot for the nose. Return to freezer until ready to serve.

Remove middle size ice cream pieces from the freezer one at a time, place licorice pieces down the front to create buttons. Assemble snowmen, lightly pressing scoops together so they stick to one another. Return snowmen to the freezer until ready to serve.

Make top hats by roasting marshmallows over the flame of a gas burner. Place roasted marshmallows on top of a chocolate wafer while still hot, so they will stick. Dust with confectioners' sugar. Place top hats on snowmen just prior to serving.
