- 2 eggs
- ⅓ cup sugar
- ⅔ cup milk
- ⅔ cup Espresso
- ⅞ cup cream (30% fat)
- ⅔ cup chopped Dark chocolate (70% cocoa solids)
- For the garnish
- mint
- 1 cup Raspberries
- ⅜ cup milk

Preparation steps
1.
Whisk together the eggs, sugar, milk and espresso in a large bowl set over a pan of simmering water until the mix is thick and creamy.
2.
Let the mix cool, stirring from time to time.
3.
Whip the cream until stiff peaks form. Fold the cream and chocolate into the cold egg mixture.
4.
Put the ice cream mixture to churn in an ice cream machine, or pour into a flat metal dish and freeze for at least 4 hours, stirring well every 30 minutes.
5.
To serve use an ice cream scoop to put the ice cream into the dessert glasses. Pour chilled milk over the tops, garnish with mint and decorate with the raspberries.
