- 21 ozs cooking Apple (unpeeled and chopped)
- 4 cups water
- sugar
- 1 Tbsp lemon juice
- dried, red chili peppers (chopped)
- Star anise

Preparation steps
1.
Put the chopped apples and cores into a large heavy-based pan with the water.
2.
Bring to a boil, then reduce the heat and simmer until the apples soften and become pulpy, stirring occasionally.
3.
Ladle the fruit and juices into a scalded jelly bag.
4.
Strain through the jelly bag overnight into a bowl.
5.
Measure the juice into a large heavy-based pan and to every 600ml (20 fl oz) juice allow 450g (1lb) sugar.
6.
Heat the juice and sugar with the lemon juice and stir over a low heat until the sugar has dissolved completely.
7.
Bring to a boil and boil rapidly for about 10-20 minutes until setting point is reached.
8.
Pour into hot sterilised jars, add a dried chilli and a star anise to each jar. Cover, seal and label
